Quick & Easy Salad HPLF | Cookat Time

Hi there, everyone! How is your week going? Mine is busy! But the sun has decided to shine around here and I feel full of Vitamin D! Nothing better than some sunlight to brighten up your week! So, today I’m going to share with you a super quick and easy salad you can throw in under 5 minutes! I love this recipe because it lasts forever and I don’t have to worry about cooking every single day! Also, it’s very fresh and full of good nutrients!

The recipe is as follows:

🌿 1/2 can of chickpeas (garbanzo beans)

🌿1 large tomato (or more)

🌿1/2 cucumber

🌿1 onion (because I love it! But you can skip this or add just half)

🌿Rocket leaves or cornsalad

🌿100gr cooked Quinoa

🌿Feta cheese

Dice the tomato, the cucumber and the feta in squares. You can chop the onion as you prefer it; I chopped mine in thin wedges. Pass the chickpeas under water.

Add all ingredients to a bowl and mix them.

You can add any spices you like; I added 1tbsp of olive oil, 2tbsp of balsamic vinegar and some parsley. Remember that the cucumber and the onion will give this salad a fresh taste, and the juices from the tomato and the cucumber will be all there too, so, in my opinion, you don’t need many spices.

All ready! This salad lasts us 3 meals (we’re two) and we keep it in the fridge covered with plastic film or in an air-tight container. You can eat it just as is, you have a lot of protein from the chickpeas, quinoa and the feta, or you can cook something else or add any ingredients you’d like to make you feel fuller. For us, it works this way, but we sometimes have a bowl of soup before eating the salad.

Olá! Mais uma vez em português! Esta é uma salada cheia de nutrientes e é uma opção vegetariana. Aqui em casa, esta receita para dois, chega para cerca de 3 refeições. Para a conservar, é so usar um recipiente de vidro ou cobrir com papel transparente.

Aqui vai a receita:

🌿 1/2 lata de grao de bico

🌿 1 tomate grande (ou mesmo ate mais)

🌿 1/2 pepino

🌿 1 cebola (podem usar apenas meia, se nao gostarem muito de cebola, mas eu ADORO🌿

🌿 100gr de quinoa cozido

🌿 Folhas de salada

🌿 Queijo feta

Só têm que cortar os ingredientes em cubos e adicionar tudo numa taça. Podem usar as especiarias que preferirem, mas como os sumos do pepino e do tomate se misturam com todos os ingredientes, na minha opinião, não é preciso adicionar nada mais. A salada é muito fresca e deixa-nos muito saciados, devido à quinoa e ao grão de bico. É uma ótima refeição para o final do dia quando não nos apetece andar à volta de tachos e panelas. Aproveitem! 🌿 1/2 boîte de pois chiches

🌿 1 grande tomate

🌿 1/2 cocombre

🌿 1 oignon (ou 1/2)

🌿 100g quinoa cuit

🌿 Roquette ou mâche

🌿 Feta

Découpez la tomate, le concombre et la feta en carrés. Vous pouvez hacher l’oignon comme vous le préférez; J’ai coupé les miens en quartiers minces. Passer les pois chiches sous l’eau. Ajouter tous les ingrédients dans un bol et les mélanger.

Vous pouvez ajouter toutes les épices que vous souhaitez; J’ai ajouté 1 c. à soupe d’huile d’olive, 2 c. à soupe de vinaigre balsamique et du persil. Rappelez-vous que le concombre et l’oignon donneront à cette salade un goût frais, et les jus de la tomate et du concombre seront tous là aussi, donc, à mon avis, vous n’avez pas besoin de beaucoup d’épices.

Et tout est prêt! Cette salade nous dure que 3 repas (nous sommes deux) et nous le gardons dans le réfrigérateur recouvert de film plastique ou dans un récipient hermétique. Vous pouvez la manger telle quelle, vous avez beaucoup de protéines grâce aux pois chiches, quinoa et la feta, ou vous pouvez cuisiner quelque chose d’autre ou ajouter les ingrédients que vous souhaitez pour accommoder le tout selon vos goûts. Pour nous, ça fonctionne de cette façon, mais nous avons parfois un bol de soupe avant de manger la salade.
