Hey there! When Cat asked me to do a post on some of my favourite recipes I got super excited. As a typical vegan I am all about sharing my lifestyle. Before we get any further I do have to tell you guys about Cat! We met in college – how cliché, I know! – and we got off right from the start. We instantly became party buddies, because before she became a superwoman that does a million different things she was just a normal college kid. SHOCKING! We were legen- wait for it-dary! Hahahah. I’m sure she can share with you some memories of us together, I won’t spill the beans on her. I’ll just let you know that even since then she was an amazing friend and the most incredible go getter.
Back to the eating part! I could give you a bunch of different recipes which are delicious, but today I decided to let you in on one of my days and what I like to eat. I’m a big fan of Stefanie Rose, she has a YouTube channel where she shares loads of recipes and workout plans, it’s so informative, I can’t praise her enough.
Morning usually only goes one of two ways, either I go the lazy way and prepare some super boring oats with cinnamon and banana or I do some work and get a smoothie ready. Today I went for the smoothie. It is a basic green smoothie with a bit of protein for a twist:
1 banana 🍌 – 100 grams frozen mango – 1/2 tsp of Matcha – 1 cup spinach – 1 cup (250ml) unsweetened oat milk 🥛 – 1 scoop (40g) vanilla (or unflavoured protein) – 1 tbsp of Mix of seeds (linseeds, sesame seeds, poppy seeds)
By the time noon hits I’m ready to eat again, I’m a big snacker and I’m trying to wean myself off of it, but when I’m really craving something I’ll eat some corn crackers. Lunch is always running so I do meal prep for the week to avoid eating junk. This time I made some concoction with black beans and bulgur that turned out great!
60 grams of bulgur – 1/4 onion, chopped – 1/3 red pepper, diced – 120 grams tofu – Juice from one lime – 1 tsp Mexican seasoning – 1 tsp cumin – 1/4 tsp cayenne pepper – 1/4 tsp pepper 🌶 – 1 (420 gram) can black beans, drained – 1 tin sweet corn, drained 🌽 – 50 grams cherry tomatoes, halved 🍅 – 1/2 avocado, diced 🥑
When I get home for work around 5.30/6 pm I need to eat something so I’ll just eat fruit and a toast with jam and peanut butter. I’m addicted to that stuff! I don’t think you need a recipe for that. For dinner, I eat a mixed vegetable soup with anything I have in the fridge. It’s the best way to finish the day and not going to sleep way too full.
